Reese’s Peanut Butter Blondies

This recipe for Reese’s Peanut Butter Blondies is loaded with miniature peanut butter cups, marshmallows, semi-sweet chocolate chips, and peanut butter chips.  This dessert has the perfect compliment of peanut butter and chocolate packed into these scrumptious blondie bars.

I love the combination of peanut butter and chocolate in a dessert. Whenever you have these two ingredients in a recipe, it’s pretty much guaranteed that you’re going to have a hit. These blondie bars are soft and a little gooey because of the marshmallows. I’m not usually a big marshmallow fan, but this ingredient works well with this bar recipe and blends in nicely with the rest of the ingredients.

My inspiration for this recipe came from the baking chocolatess. There is a picture on Pinterest of this dessert that is truly droolworthy. I’ve made this dessert a couple times and have reduced the amount of brown sugar, chocolate and candy added from the original recipe.

Here’s how to make this recipe:

Start off by lining a 13 x 9 inch baking dish with parchment paper and lightly grease. Preheat oven to 350 degrees F.

In large, microwave-safe bowl, melt the butter in the microwave. Set aside to cool. While waiting, grab a cutting board and start to unwrap the Reese’s miniature peanut butter cups and  chop into fourths.

Once this is done, set aside and add brown sugar to the bowl of melted butter. Blend with an electric mixer on medium speed for 3 minutes.

Add in eggs, one at a time, and vanilla extract. Blend on medium speed until well-combined.

Add in half of the flour, baking powder, and salt. Mix on medium-low speed until ingredients are starting to combine. Finish adding in remaining portion of flour and blend just until ingredients are combined.

Fold in the full amount of marshmallows, 1/2 cup of semi-sweet chocolate chips, and 3/4 cup of the chopped peanut butter cups into the batter.

Spread batter into prepared pan.

Sprinkle the top of the batter with 1/4 cup of semi-sweet chocolate chips, 1/4 cup of peanut butter chips, and 1/2 cup of the chopped peanut butter cups.

Place pan in oven and  bake at 350 degrees F for 30 – 32 minutes or until golden brown. Remove to wire rack to cool before cutting into squares.

Ingredients

  • 1 cup (16 tbsp) unsalted butter, melted
  • 1 1/2 cups light brown sugar, packed
  • 2 large eggs, room temp
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 cups miniature marshmallows
  • 1 1/4 cups Reese's miniature peanut butter cups, divided
  • 3/4 cup semi-sweet chocolate chips, divided
  • 1/4 cup Reese's peanut butter chips

Instructions

  1. Line 13 x 9 inch baking dish with parchment paper and lightly grease. Preheat oven to 350 degrees F.

    2. In large, microwave-safe bowl, melt butter. Set aside to cool.

    3. Unwrap Reese's miniature peanut butter cups and chop into fourths. Set aside. (reserve 1/2 cup for topping)

    4. Add brown sugar to bowl of melted butter. Blend with electric mixer on medium speed for 3 minutes.

    5. Add in eggs, one at a time, and vanilla extract. Blend until well-combined.

    6. Add in flour, baking powder, and salt. Blend on medium-low speed just until ingredients are combined.

    7. Fold in marshmallows, 1/2 cup of the semi-sweet chocolate chips, and 3/4 cup of the chopped peanut butter cups.

    8. Spread batter into prepared baking dish.  Sprinkle 1/4 cup of semi-sweet chocolate chips, 1/4 cup of peanut butter chips, and 1/2 cup of the remaining chopped peanut butter cups on top of the batter.

    9. Bake at 350 degrees F 30 to 32 minutes or until golden brown.

    10. Remove to wire rack to cool completely before cutting into squares.
