This homemade recipe for chocolate brownie ice cream will leave chocolate lovers drooling for more. An ice cream rich in chocolate flavor and loaded with chunks of homemade brownie.
I’m in love with my ice cream maker. It’s one of those devices that I convinced myself that I didn’t need, but now that I have it, I can’t imagine life without it. My son now puts in a regular request for me to make him his favorite, mint chocolate chip ice cream. He’s actually paid me one of the highest compliments by saying my homemade version is better than store bought.
Even though my daughter is a teenager and my son is in his second year of college, they are both super competitive and my daughter will be the first to admit that she has a jealous streak a mile long when it comes to her brother. In order to keep life fair and tolerable in our household, I knew I would need to come up with something special for my daughter, so I made this homemade chocolate brownie ice cream for her.
I’ve made homemade vanilla, cookies and cream, and mint chocolate chip ice cream so far and these are all relatively easy to make. Chocolate ice cream is still easy to make, but I’ll warn you up front that it contains a few more steps and a little longer waiting time.
Here’s how to make this recipe:
In a small saucepan, add in milk, cream, sugar, cocoa powder, and salt. Whisk ingredients together and continue to heat over medium-low heat for at least 8 – 10 minutes or until mixture comes to a low boil. Note: At first the cocoa powder will remain floating on top of pan but as milk warms up, the cocoa powder eventually dissolves.
Reduce heat to low and add in chocolate. Continue to stir until chocolate has melted.
Remove from heat and add in vanilla extract. Stir.
Place lid on saucepan and place in refrigerator to chill for at least 2 – 3 hours. I know it’s a pain to have to wait, but if you add a warm or even room temperature ice cream base to the ice cream maker at this point, it won’t freeze.

After the chocolate mixture has cooled in refrigerator for at least two to three hours, you can add to the ice cream maker. For my ice cream maker, I simply add the frozen bowl to the machine and then pour the ingredients into the machine. I leave it on to do its magic for about 20 minutes.
Chop up the brownies into small chunks to measure at least a cup (you can add more if you like) and add to the ice cream maker for the last five minutes.
When the ice cream comes out of the ice cream maker, it should have the texture of soft serve.
Place ice cream mixture into a storage container and place in freezer to harden for at least 5 – 6 hours.

Chocolate Brownie Ice Cream Recipe
- 2 cups heavy whipping cream
- 1 cup milk, whole or 2%
- 3/4 cup granulated sugar
- 1/3 cup cocoa powder
- 3/4 cup semisweet or bittersweet chocolate chips
- 1 tsp vanilla
- 1/4 tsp salt
- 1 cup cooked brownies, chopped
In medium sized saucepan, combine heavy cream, milk, granulated sugar, cocoa powder, and salt. Heat over medium-low heat, stirring frequently until mixture comes to a low boil.
2. Turn heat down to low and add in chocolate. Continue to stir until ingredients are combined.
3. Remove saucepan from heat and add in vanilla extract. Cover saucepan with lid and place in refrigerator to chill for at least 2 to 3 hours.
4. Add chilled chocolate mixture into ice cream maker and proceed according to directions on ice cream maker.
5. During last five minutes, add in chopped brownie pieces.
6. Place ice cream mixture in airtight storage container. Place in freezer for ice cream to harden for at least 5 – 6 hours.
For best results, freeze ice cream for at least 5 – 6 hours.
