These homemade Almond Cookies are soft and chewy and are loaded with almond flavor. These tasty cookies are easy to make and are made with only 5 ingredients.
In the past, we have had some of our higher level patients drop off an arrangement of Italian cookies to our rehab department after they have graduated from therapy.
My first pick used to be the Venetian cookies, also known as rainbow cookies. These are a multi-colored rectangular cookie that is soft and full of almond flavor.
A couple times, we had cookie arrangements delivered that didn’t include any Venetian cookies. I was kind of at a loss on what else I should pick. Hard cookies don’t really appeal to me that much. Thankfully, Joanne (a co-worker) pointed me toward the almond cookies.
At first glance, the almond cookie looks a little bland and boring. It’s also a bit deceptive as it looks like it’s going to be a hard, butter cookie. I’ve had this cookie now several times and it has always been soft and chewy and so full of almond flavor. It is so similar in taste to the pretty Venetian cookies as they both contain almond paste.
You’re probably wondering why I just don’t make the Venetian cookies and the answer is time. The Venetian cookie contains several layers, including a ganache and is much more time consuming to make.
This almond cookie takes less than 10 minutes to prepare and about 15 to 20 minutes to bake. No chilling of dough is required and the recipe is pretty simple to follow. Here’s how to make this recipe:
Break almond paste into pieces and add to food processor. (The almond paste smells so good) Add in sugar, egg white, and vanilla extract. Blend ingredients together in food processor.
Once the ingredients are combined as above, you can either drop dough by rounded teaspoonfuls onto baking sheet or you can place the batter into a piping bag and make the cookie design.
I opted to place the batter into the piping bag and used a 1M Wilton decorating tip. Let me warn you: you’re fingers will get a work out trying to squeeze this batter out.
Place slivered almonds into center of each cookie. Some people also opt to add a maraschino cherry to the middle to give the cookie a little pop of color.
Bake at 325 degrees F for 15 to 20 minutes. Cookie will remain light in color and edges of cookie should be a light golden brown. The cookies will have a crisp bottom and a soft, chewy top.
Remove pan to wire rack. Let cookie stay on pan for 2 minutes and then remove to wire rack to finish cooling.
The only downside to this recipe is that it makes a small batch, 12 – 15 cookies at the most.

- 8 oz almond paste
- 1/2 cup granulated sugar
- 1 egg white
- 1/2 tsp vanilla extract
- 2 – 3 tsp slivered almonds for top of cookie
Preheat oven to 325 degrees F. Line baking sheet with parchment paper or silicone baking mat.
2. Break almond paste into pieces and add to food processor. Add in sugar, egg white, and vanilla extract. Blend until ingredients are well-combined.
3. Drop dough by teaspoonfuls onto cookie sheet or place dough in piping bag using 1M decorating tip, making circular decoration. Place 1 -2 slivered or sliced almonds into center of each cookie.
4. Bake cookies at 325 degrees for 15 to 20 minutes or until edges of cookie turn golden brown.
5. Remove pan to wire rack. After 2 minutes, remove cookies to wire rack to finish cooling.
